Chocolate Mint Brownies

PREP TIME: 10min

COOK TIME: 30min SERVES: 6

INGREDIENTS:

  • 250g butter, melted

  • ½ cup cocoa

  • 1 ½ cups caster sugar

  • 4 eggs

  • 1 cup flour

  • 1 tsp baking powder

  • 1 tsp peppermint essence

  • 300g dark chocolate melts, divided

  • ¾ cup thickened cream


METHOD:

  • Step 1: Preheat oven to 180°C.

  • Step 2: Grease a 20 x 28cm slice tray with spray oil.

  • Step 3: Place melted butter, cocoa and sugar into a large mixing bowl. Mix together well.

  • Step 4: Add the eggs, peppermint essence, flour and baking powder. Mix together to combine.

  • Step 5: Fold in 150g of chocolate melts and pour mixture into prepared tray.

  • Step 6: Bake for 25-30 minutes.

  • Step 7: Allow cake to cool on a cooling rack and then cut into brownie squares.

  • Step 8: Place cream and remaining chocolate melts into a microwave safe bowl. Heat in 10 second bursts, stirring in between until ingredients have melted and ganache has formed.

  • Step 9: Drizzle chocolate ganache over brownies with a spoon or piping bag.
