250g butter, melted
½ cup cocoa
1 ½ cups caster sugar
1 cup flour
1 tsp baking powder
1 tsp peppermint essence
300g dark chocolate melts, divided
¾ cup thickened cream
Step 1: Preheat oven to 180°C.
Step 2: Grease a 20 x 28cm slice tray with spray oil.
Step 3: Place melted butter, cocoa and sugar into a large mixing bowl. Mix together well.
Step 4: Add the eggs, peppermint essence, flour and baking powder. Mix together to combine.
Step 5: Fold in 150g of chocolate melts and pour mixture into prepared tray.
Step 6: Bake for 25-30 minutes.
Step 7: Allow cake to cool on a cooling rack and then cut into brownie squares.
Step 8: Place cream and remaining chocolate melts into a microwave safe bowl. Heat in 10 second bursts, stirring in between until ingredients have melted and ganache has formed.
Step 9: Drizzle chocolate ganache over brownies with a spoon or piping bag.
