Chicken Spring Rolls


PREP TIME: 15min

COOK TIME: 30min SERVES: 4

INGREDIENTS:

  • 500g chicken mince

  • 1 cup carrot, grated

  • 1 cup corn kernels

  • 2 tsp ginger powder

  • 1 tbsp garlic, minced

  • 2 tsp coriander powder

  • ½ tsp ground pepper

  • 2 tsp salt

  • 10 spring roll pastry sheets

  • Olive oil spray


METHOD:

  • Step 1: Preheat oven to 200°C.

  • Step 2: Take spring roll pastry sheets out of freezer to thaw.

  • Step 3: In a mixing bowl, mix all the other ingredients together.

  • Step 4: Line a baking tray with baking paper.

  • Step 5: Lay one sheet of spring roll pastry in a diamond shape.

  • Step 6: Add two tablespoons of mixture across the lower end of the diamond.

  • Step 7: Fold in side corners of the pastry.

  • Step 8: Brush top corner of pastry with water.

  • Step 9: Roll pastry from bottom up.

  • Step 10: Place the spring roll on the lined tray.

  • Step 11: Repeat with remaining mixture and pastry sheets.

  • Step 12: Spray spring rolls with oil.

  • Step 13: Bake for 25-30 minutes, turning twice.
