INGREDIENTS:
500g chicken mince
1 cup carrot, grated
1 cup corn kernels
2 tsp ginger powder
1 tbsp garlic, minced
2 tsp coriander powder
½ tsp ground pepper
2 tsp salt
10 spring roll pastry sheets
Olive oil spray
METHOD:
Step 1: Preheat oven to 200°C.
Step 2: Take spring roll pastry sheets out of freezer to thaw.
Step 3: In a mixing bowl, mix all the other ingredients together.
Step 4: Line a baking tray with baking paper.
Step 5: Lay one sheet of spring roll pastry in a diamond shape.
Step 6: Add two tablespoons of mixture across the lower end of the diamond.
Step 7: Fold in side corners of the pastry.
Step 8: Brush top corner of pastry with water.
Step 9: Roll pastry from bottom up.
Step 10: Place the spring roll on the lined tray.
Step 11: Repeat with remaining mixture and pastry sheets.
Step 12: Spray spring rolls with oil.
Step 13: Bake for 25-30 minutes, turning twice.
