3 sheets frozen Shortcrust pastry
½ teaspoon of salt
½ tsp ground pepper
1 tbsp olive oil
150g tasty cheese, grated
¼ cup parmesan, grated
2 cups fresh basil, chopped
1 cup spring onions tops, chopped
1 garlic clove
¼ cup milk
Step 1: Preheat oven to 200°C. Step 2: Line a large baking tray with baking paper.
Step 2: Take Shortcrust pastry sheets out of freezer to thaw.
Step 3: Place basil, salt, pepper, olive oil, spring onions, garlic and parmesan into a food processor. Process together to create a thick pesto paste.
Step 4: Place one sheet of pastry on a flat work space. Generously brush a layer of pesto paste over the sheet of pastry.
Step 5: Sprinkle 2 tbsp of tasty cheese over the pesto.
Step 6: Tightly roll the entire pastry into a long log.
Step 7: Cut the log into thirds to create three scroll wheels.
Step 8: Place the scrolls on the prepared tray and lightly brush with milk.
Step 9: Repeat process with all remaining ingredients.
Step 10: Bake scrolls for 35-40 minutes or until golden.
