1 zucchini, grated
2 cups frozen broccoli florets
4 eggs, beaten
½ cup parmesan, grated
1 ½ cups corn flour
1 tsp olive oil
1 tsp salt
¼ tsp ground pepper
Spray olive oil
Step 1: Preheat oven to 180°C. Line a baking dish with spray oil.
Step 2: Steam 2 cups of frozen broccoli florets in the microwave as per packet instructions. Once steamed, set aside to cool slightly.
Step 3: Beat eggs, oil, salt and pepper in a mixing bowl.
Step 4: Add zucchini, parmesan and corn flour. Stir to combine.
Step 5: Mix in the steamed peas.
Step 6: Pour mixture into the baking dish.
Step 7: Bake for 20 minutes or until egg is cooked through and golden.
