Cheese & Chive Scones

PREP TIME: 15min

COOK TIME: 20min SERVES: 12

INGREDIENTS:

  • 3 ½ cups self-raising flour1 tbsp Caster sugar

  • 1 tsp salt

  • 70g butter, chopped

  • 1 ½ cups milk

  • ¼ cup, fresh chives chopped

  • 1 tbsp dried parsley

  • ¼ cup parmesan, grated

  • ⅔ cup cheddar, grated

  • 1 tsp minced garlic

METHOD:

  • Step 1: Preheat oven to 200°C. Step 2: Line a 20 x 28cm slice tray with baking paper.

  • Step 2: Combine flour, sugar, chopped butter and salt in a large mixing bowl. Knead together until a bread crumb texture forms.

  • Step 3: Add the milk, parsley, chives, garlic and cheddar cheese. Mix together with an electric mixer dough hook, to create a near dough consistency.

  • Step 4: Turn dough mixture out onto a floured work bench and work dough into a 4cm thick circle.

  • Step 5: Use a 5cm round cookie cutter to cut out 12 scones.

  • Step 6: Place scones on prepared tray and brush with extra milk.

  • Step 7: Sprinkle scones with parmesan cheese and bake for 15- 20 minutes.
