Carrot Muffins

PREP TIME: 10min

COOK TIME: 30min SERVES: 12

INGREDIENTS:

  • 1 cup plain flour

  • 1  cup caster sugar

  • ½ tsp cinnamon

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ¼ tsp salt

  • 1 ½ cups carrot, grated

  • 2 eggs, lightly beaten

  • ⅔ cup olive oil

  • 1 tsp vanilla essence


METHOD:

  • Step 1: Preheat oven to 180°C.

  • Step 2: Line a 12-hole muffin tray with paper muffin cases.

  • Step 3: Combine all ingredients in a large mixing bowl and mix well, until mixture is smooth.

  • Step 4: Spoon the mixture into the muffin holes.

  • Step 5: Bake at 170°C for approximately 25-30 minutes.
