INGREDIENTS:
1 cup plain flour
1 cup caster sugar
½ tsp cinnamon
1 tsp baking soda
½ tsp baking powder
¼ tsp salt
1 ½ cups carrot, grated
2 eggs, lightly beaten
⅔ cup olive oil
1 tsp vanilla essence
METHOD:
Step 1: Preheat oven to 180°C.
Step 2: Line a 12-hole muffin tray with paper muffin cases.
Step 3: Combine all ingredients in a large mixing bowl and mix well, until mixture is smooth.
Step 4: Spoon the mixture into the muffin holes.
Step 5: Bake at 170°C for approximately 25-30 minutes.
