Carrot Choc Cake

PREP TIME: 15min

COOK TIME: 45min SERVES: 8-10

INGREDIENTS:

  • 50g butter, melted

  • 2 cups self raising flour

  • 1 cup milk

  • 1 cup sugar

  • 1 cup carrots, grated

  • 1 tsp bi carb soda

  • 3 tbsp cocoa

  • 2 eggs

  • Spray oil

Chocolate Icing

  • 1 ½ cup icing sugar

  • 1/4 cup milk

  • 2 tbsp cocoa


METHOD:

  • Step 1: Preheat oven to 180°C.

  • Step 2: Grease a 6cm x 27cm Loaf pan with spray oil.

  • Step 3: Combine the butter, sugar, flour bi carb soda and milk in a large mixing bowl. Mix together well.

  • Step 4: Add the grated carrot, vanilla essence and the cocoa and beat mixture until smooth.

  • Step 5: Pour mixture into the prepared tray. Bake for 40-45 minutes.

  • Step 6: Allow the slice to cool on a cooling rack before icing.

  • Step 7: Prepare the icing by mixing icing sugar, cocoa and milk together, until smooth.

  • Step 8: With a spatula evenly spread the icing over the top of the cake and serve.
