Caesar Salad

PREP TIME: 10min

SERVES: 6-8

INGREDIENTS:

  • 2  Baby Cos lettuces, washed and shredded

  • 1 cup Parmesan, shaved 

  • 2 cups Croutons

Caesar Dressing 

  • 3 tbsp white wine vinegar

  • ⅔ cup extra virgin olive oil

  • 2 garlic cloves, minced

  • 1 tsp anchovy paste

  • 2 tbsp lemon juice

  • 1 tsp dijon mustard           

  • 1 cup mayonnaise

  • ½ cup Parmesan cheese, grated

  • ½ tsp salt

  • ¼ tsp ground pepper


METHOD:

  • Step 1: Combine shredded lettuce, shaved Parmesan and croutons in a large salad bowl.

  • Step 2: Combine all dressing ingredients in a small mixing bowl. Mix together until Caesar dressing is smooth in texture. 

  • Step 3: Refrigerate Caesar dressing and salad until ready to serve. Dress salad by drizzling Caesar  dressing over salad, tossing together well.
