INGREDIENTS:
2 Baby Cos lettuces, washed and shredded
1 cup Parmesan, shaved
2 cups Croutons
Caesar Dressing
3 tbsp white wine vinegar
⅔ cup extra virgin olive oil
2 garlic cloves, minced
1 tsp anchovy paste
2 tbsp lemon juice
1 tsp dijon mustard
1 cup mayonnaise
½ cup Parmesan cheese, grated
½ tsp salt
¼ tsp ground pepper
METHOD:
Step 1: Combine shredded lettuce, shaved Parmesan and croutons in a large salad bowl.
Step 2: Combine all dressing ingredients in a small mixing bowl. Mix together until Caesar dressing is smooth in texture.
Step 3: Refrigerate Caesar dressing and salad until ready to serve. Dress salad by drizzling Caesar dressing over salad, tossing together well.
