Beet, Cheese & Avo Stacks

PREP TIME: 10min

SERVES: 1-2

INGREDIENTS:

  • 2 slices wholemeal bread

  • ½ avocado, thinly sliced

  • 2 tbsp cream cheese spread

  • ½ cup rocket salad

  • 2 pickled baby beetroots, thinly sliced


METHOD:

  • Step 1: Place 2 slices of bread open on a flat work space.

  • Step 2: Spread 1tbsp of cream cheese on each slice of bread.

  • Step 3: On one slice, lay the slices of beetroot on top of the creamcheese.

  • Step 4: Sprinkle on the rocket salad.

  • Step 5: Top with avocado slices.

  • Step 6: Close the sandwich with the other slice of bread and slice the sandwich into triangle quarters.

  • Step 7: Stack the triangles in pairs. Stick a bamboo skewer through the centre of each stack to secure.

  • Step 8: Serve.
