125 g butter
3/4 cup caster sugar
1 tsp vanilla essence
2 bananas, mashed
1 apple, grated
2 cups self-raising flour
1/4 cup milk
3 tbsp rolled oats
Step 1: Preheat oven to 180°C.
Step 2: Lightly spray a 12-hole muffin tray with olive oil.
Step 3: Melt butter and place into a large mixing bowl with the sugar and the vanilla essence.
Step 4: Fold in the mashed bananas, the grated apple and 2 tablespoon of oats.
Step 5: Add the egg and the flour, and then the milk. Mix all ingredients together.
Step 6: Spoon the mixture into the muffin holes.
Step 7: Sprinkle 1 tablespoon of oats across the 12 muffins.
Step 8: Bake at 170°C for 20-25 minutes.
