Banana Oat Muffins

COOK TIME: 20min SERVES: 12

INGREDIENTS:

  • 125 g butter

  • 3/4 cup caster sugar

  • 1 tsp vanilla essence

  • 1 egg

  • 2 bananas, mashed

  • 1 apple, grated

  • 2 cups self-raising flour

  • 1/4 cup milk

  • 3 tbsp rolled oats


METHOD:

  • Step 1: Preheat oven to 180°C.

  • Step 2: Lightly spray a 12-hole muffin tray with olive oil.

  • Step 3: Melt butter and place into a large mixing bowl with the sugar and the vanilla essence.

  • Step 4: Fold in the mashed bananas, the grated apple and 2 tablespoon of oats.

  • Step 5: Add the egg and the flour, and then the milk. Mix all ingredients together.

  • Step 6: Spoon the mixture into the muffin holes.

  • Step 7: Sprinkle 1 tablespoon of oats across the 12 muffins.

  • Step 8: Bake at 170°C for 20-25 minutes.
