Banana Cake

PREP TIME: 5min

SERVES: 10-12

INGREDIENTS:

  • 50g butter

  • ¾ cup caster sugar

  • 2 bananas, mashed

  • ½ tsp salt

  • 2 cups plain flour

  • 1 tsp bicarb soda

  • 1 cup milk

  • ½ tsp vanilla essence

  • 1 tsp lemon zest

  • 2 eggs

  • ½ cup oats

METHOD:

  • Step 1: Preheat oven to 170°C.

  • Step 2: Line a 27cm loaf pan with baking paper.

  • Step 3: Melt butter and place into a large mixing bowl with sugar, salt and vanilla essence. Stir to combine. Step 4: Fold in the mash banana and lemon zest. Step 5: Add the egg, flour, bicarb soda and milk. Beat all ingredients together until a smooth consistency forms. 

  • Step 6: Pour the cake mixture into the loaf pan.

  • Step 7: Sprinkle the oats across the top of the cake. 

  • Step 8: Bake at 170°C for 40-45 minutes or until cooked through and golden. 

  • Step 9: Allow to cool and serve.
