INGREDIENTS:
50g butter
¾ cup caster sugar
2 bananas, mashed
½ tsp salt
2 cups plain flour
1 tsp bicarb soda
1 cup milk
½ tsp vanilla essence
1 tsp lemon zest
2 eggs
½ cup oats
METHOD:
Step 1: Preheat oven to 170°C.
Step 2: Line a 27cm loaf pan with baking paper.
Step 3: Melt butter and place into a large mixing bowl with sugar, salt and vanilla essence. Stir to combine. Step 4: Fold in the mash banana and lemon zest. Step 5: Add the egg, flour, bicarb soda and milk. Beat all ingredients together until a smooth consistency forms.
Step 6: Pour the cake mixture into the loaf pan.
Step 7: Sprinkle the oats across the top of the cake.
Step 8: Bake at 170°C for 40-45 minutes or until cooked through and golden.
Step 9: Allow to cool and serve.
