1kg pork sausages
1200g tinned tomato, crushed
400g tinned Cannellini beans
1 sweet potato, roughly chopped
1 carrot, chopped
4 washed potatoes, chopped
1 garlic clove, chopped
1 white onion, chopped
1 cup parsley, chopped
2 tbsp olive oil
1 tsp salt
Crunchy baguette bread
Step 1: Preheat oven to 200°C.
Step 2: In a large baking dish place 2 tbsp of oil. Add the chopped sweet potato, carrot, potatoes, garlic, onion and parsley. Season the vegetables with salt and pepper and toss together to combine.
Step 3: On a flat surface, chop each sausage into 4 pieces. Place the cut sausages into the baking dish. Mix the sausage pieces amongst the seasoned vegetables.
Step 4: Pour the Cannellini beans (undrained) over the sausages and vegetables and cover all the ingredients with the 800g of crushed tomato.
Step 5: Add ½ cup water to the baking dish, and cover the dish with foil.
Step 6: Bake covered for 50 minutes.
Step 7: Remove the dish from the oven. Uncover the dish and crack 4 eggs over the bake.
Step 8: Cook uncovered for a further 10 minutes.
Step 9: Serve with a side of crunchy baguette bread.
