Baked Meatballs

PREP TIME: 15min

COOK TIME: 1hr 15min SERVES: 4

INGREDIENTS:

  • 500g beef mince

  • ½ cup breadcrumbs

  • ½ cup parmesan, grated

  • 2 eggs, lightly beaten

  • ¼ cup parsley, chopped

  • 2 cloves garlic, minced

  • 2 tbsp oregano

  • 2 carrots

  • 700g passata

  • 400g tin of diced tomatoes

  • ½  cup of water

  • 1 large onion, diced

  • 5 basil sprigs

  • 1 tbsp salt

  • 1 tsp ground pepper

  • ¼ cup olive oil


METHOD:

  • Step 1: Preheat oven to 200°C.

  • Step 2: In a large mixing bowl, combine the breadcrumbs, parmesan, eggs, parsley, garlic, oregano, 1 tsp salt and ½ tsp ground pepper.

  • Step 3: Use your hands to mix all ingredients together.

  • Step 4: Roll 20 mini meatballs and place them neatly in a baking dish.

  • Step 5: Wash, peel and dice the carrots and add them to the dish.

  • Step 6: Add the diced onion and basil sprigs to the dish also.

  • Step 7: Drizzle ¼ cup Olive oil over the dish.

  • Step 8: Add the water, the Passata and the diced tomatoes.

  • Step 9: Season the dish with salt and pepper and stir the meatballs to combine and coat well.

  • Step 10: Cover the dish with foil and bake for 1hour 15 minutes.
