500g beef mince
½ cup breadcrumbs
½ cup parmesan, grated
2 eggs, lightly beaten
¼ cup parsley, chopped
2 cloves garlic, minced
2 tbsp oregano
400g tin of diced tomatoes
½ cup of water
1 large onion, diced
5 basil sprigs
1 tbsp salt
1 tsp ground pepper
¼ cup olive oil
Step 1: Preheat oven to 200°C.
Step 2: In a large mixing bowl, combine the breadcrumbs, parmesan, eggs, parsley, garlic, oregano, 1 tsp salt and ½ tsp ground pepper.
Step 3: Use your hands to mix all ingredients together.
Step 4: Roll 20 mini meatballs and place them neatly in a baking dish.
Step 5: Wash, peel and dice the carrots and add them to the dish.
Step 6: Add the diced onion and basil sprigs to the dish also.
Step 7: Drizzle ¼ cup Olive oil over the dish.
Step 8: Add the water, the Passata and the diced tomatoes.
Step 9: Season the dish with salt and pepper and stir the meatballs to combine and coat well.
Step 10: Cover the dish with foil and bake for 1hour 15 minutes.
