INGREDIENTS:
½ cup zucchini, grated
½ cup quinoa
250g frozen broccoli florets
4 eggs, beaten
½ cup parmesan, grated
1 ½ cups self-rising flour
1 tsp olive oil
1 tsp salt
¼ tsp ground pepper
Spray olive oil
METHOD:
Step 1: Preheat oven to 180°C. Line a baking tray with baking paper and spray oil.
Step 2: Cook quinoa on stovetop according to packet instructions.
Step 3: Meanwhile, steam, drain and roughly chop the broccoli florets.
Step 4: Beat eggs, oil, salt and pepper in a mixing bowl.
Step 5: Add the broccoli, quinoa, zucchini, parmesan and flour to the mixing bowl . Stir together well to combine.
Step 6: Use your hands to roll three tablespoons of mixture into a ball. Place the ball onto the baking tray. The ball will fall and flatten into a fritter shape by itself.
Step 7: Repeat this method to create 12 fritters on the tray.
Step 8: Spray fritters with oil and place tray in the oven.
Step 9: Bake for 20 minutes or until fritters are golden
