Baked Broccoli & Quinoa Fritters

SERVES: 2

INGREDIENTS:

  • ½ cup zucchini, grated

  • ½ cup quinoa

  • 250g frozen broccoli florets

  • 4 eggs, beaten

  • ½ cup parmesan, grated

  • 1 ½ cups self-rising flour

  • 1 tsp olive oil

  • 1 tsp salt

  • ¼ tsp ground pepper

  • Spray olive oil


METHOD:

  • Step 1: Preheat oven to 180°C. Line a baking tray with baking paper and spray oil.

  • Step 2: Cook quinoa on stovetop according to packet instructions.

  • Step 3: Meanwhile, steam, drain and roughly chop the broccoli florets.

  • Step 4: Beat eggs, oil, salt and pepper in a mixing bowl.

  • Step 5: Add the broccoli, quinoa, zucchini, parmesan and flour to the mixing bowl . Stir together well to combine.

  • Step 6: Use your hands to roll three tablespoons of mixture into a ball. Place the ball onto the baking tray. The ball will fall and flatten into a fritter shape by itself.

  • Step 7: Repeat this method to create 12 fritters on the tray.

  • Step 8: Spray fritters with oil and place tray in the oven.

  • Step 9: Bake for 20 minutes or until fritters are golden
