Bacon Scramble

PREP TIME: 5min

COOK TIME: 15min SERVES: 4

INGREDIENTS:

  • 50g bacon, finely diced

  • 4 eggs

  • 1 tbsp butter

  • ¾ cup milk

  • ½ teaspoon salt

  • 4 slices of bread

  • ¼ cup parmesan, grated

  • ¼ cup mozzarella, grated

  • Olive oil spray


METHOD:

  • Step 1: Beat eggs, milk and salt in a mixing bowl.

  • Step 2: Spray a large nonstick frying pan with olive oil.

  • Step 3: Fry diced bacon until golden brown.

  • Step 4: Turn heat down to low and melt a tablespoon of butter evenly around the pan.

  • Step 5: Pour egg mixture into the pan and let it sit without stirring for 30 seconds.

  • Step 6: With a wooden spoon lift and fold the scramble.

  • Step 7: Leave the scramble to sit for another 15 seconds and lift and fold again.

  • Step 8: Repeat until eggs are cooked and fluffy.

  • Step 9: Toast 4 slices of bread.

  • Step 10: Serve the scramble on top of the toasted bread and finish with a sprinkle of mozzarella and parmesan cheese.
