50g bacon, finely diced
1 tbsp butter
¾ cup milk
½ teaspoon salt
4 slices of bread
¼ cup parmesan, grated
¼ cup mozzarella, grated
Olive oil spray
Step 1: Beat eggs, milk and salt in a mixing bowl.
Step 2: Spray a large nonstick frying pan with olive oil.
Step 3: Fry diced bacon until golden brown.
Step 4: Turn heat down to low and melt a tablespoon of butter evenly around the pan.
Step 5: Pour egg mixture into the pan and let it sit without stirring for 30 seconds.
Step 6: With a wooden spoon lift and fold the scramble.
Step 7: Leave the scramble to sit for another 15 seconds and lift and fold again.
Step 8: Repeat until eggs are cooked and fluffy.
Step 9: Toast 4 slices of bread.
Step 10: Serve the scramble on top of the toasted bread and finish with a sprinkle of mozzarella and parmesan cheese.
