Aussie Biscuits (EG, NF)

INGREDIENTS:

  • 2 cups rolled oats

  • 1 ½ cup plain flour 

  • 1 cup caster sugar 

  • 1 cup desiccated coconut 

  • ⅓ cup golden syrup 

  • 125g butter 

  • 1 tsp baking soda 

  • ¼ cup boiling water


METHOD:

  • Step 1: Pre-heat oven to 160°C. 

  • Step 2: Line a cookie tray with baking paper.

  • Step 3: Place butter and golden syrup in a microwave safe bowl. Microwave for 30 seconds or until melted. Transfer into a large mixing bowl. 

  • Step 4: Mix baking soda and boiling water in a cup and add the mixture to the mixing bowl. Stir together well.

  • Step 5: Add the oats, flour, coconut and sugar and mix to combine. 

  • Step 6: Roll tablespoons of the cookie mixture into balls, and place each ball onto the prepared tray approximately 4cm apart. Flatten lightly with the back of the spoon.

  • Step 7: Bake for 20 minutes or until lightly golden.
