Egg Free & Nut Free

INGREDIENTS:
2 cups rolled oats
1 ½ cup plain flour
1 cup caster sugar
1 cup desiccated coconut
⅓ cup golden syrup
125g butter
1 tsp baking soda
¼ cup boiling water
METHOD:
Step 1: Pre-heat oven to 160°C.
Step 2: Line a cookie tray with baking paper.
Step 3: Place butter and golden syrup in a microwave safe bowl. Microwave for 30 seconds or until melted. Transfer into a large mixing bowl.
Step 4: Mix baking soda and boiling water in a cup and add the mixture to the mixing bowl. Stir together well.
Step 5: Add the oats, flour, coconut and sugar and mix to combine.
Step 6: Roll tablespoons of the cookie mixture into balls, and place each ball onto the prepared tray approximately 4cm apart. Flatten lightly with the back of the spoon.
Step 7: Bake for 20 minutes or until lightly golden.
